Lemon & Chia Cupcakes - Return of the Bake Off

So many of you British lot may be aware of the up coming return of The Great British Bake Off, which is one of my favourite programmes EVER! It starts tonight at 8 o clock and I honestly can't wait!


So in honour of its return I decided to create a watch time snack which turned out to be these scrummy Lemon and Chia Seed Cupcakes.



This recipe is inspired by a recipe from Something Swanky but adapted for my personal likes and products that you can get in the UK market. These can also be made in US though!


The cakes are probably the tastiest and softest cakes I have ever made and the dressing is so zingy I love it!

Chia seeds are meant to be a superfood and therefore you can kind of feel slightly less guilty about munching on one of these cupcakes. They give a little crunch just like poppy seeds but they are so good for you, especially in terms of the Omega 3 content!


Hope you think they look as delicious as they actually taste and I have left my recipe below!

Ingredients
  • 2 cups Plain Flour
  • 2 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1/4 tsp Salt
  • 1/2 cup Butter, softened
  • Zest of 2 Lemons
  • Juice of 1 1/2 Lemon
  • 3/4 cup Granulated Sugar
  • 2 Large Eggs
  • 2 Tbsp Chia Seeds
  • 1/2 cup Milk
  • 1 more tbsp Milk
  • 1 tsp Cornflour
  • 2 tbsp Greek Yogurt
  • 2 drops Vanilla Extract


Glaze:
  • Optional: 1/2 cup Powdered Sugar
  • Optional: 1 tbsp. Lemon Juice
Instructions
  1. Cream together the butter and sugar until creamy. Then add the lemon juice, vanilla, yogurt and milk. Then set aside.
  2. In a separate bowl mix the flour, lemon zest, baking powder, cornflour, baking soda and salt.
  3. Then careful mix the half the dry mixture into the wet mixture and then one egg. Repeat with the rest of the mixture and then the last egg. Then simply fold in the chia seeds.
  4. Distribute batter evenly among muffin tin cups (about 12).
  5. Bake at 375f or 190c for 17-22 minutes.
  6. Optional: whisk together the powdered sugar and lemon juice to make a glaze (add more lemon juice for a thinner glaze, add more powdered sugar for a thicker glaze). Dip the tops of the muffins in the glaze before serving for an extra sweet lemon kick! Personally I think this step is essential but some may like a lighter lemon zing. To apply simply turn the cupcakes upside down and dip the tops into the glaze before serving. Mmmm
