Little Red's Easy Treacle Sponge (Oven Baked Not Steamed)

Hey guys! Sorry for not posting last night but to make up for it I have a super tasty Treacle Sponge recipe that is great with ice cream or custard! I don't know about anyone else but this was my favourite pudding as a child but I don't have time for all that steaming and saucepan rubbish so I have created my own oven baked sponge which is so delicious! I hope you like it!



As always a recipe is not a Little Red recipe without cinnamon but if you do not like cinnamon you can simply leave it out and the recipe will not be affected at all.



So on to the recipe!!

Ingredients


300g golden syrup
Juice of ½ lemon
5 tbsp breadcrumbs
200g unsalted butter, softened
200g golden caster sugar
3 medium eggs
200g self-raising flour
5 tbsp milk

1/4 tsp cinnamon (for syrup)
1/2 tsp cinnamon (for sponge)

Method

  1. Heat oven to 180C/160C fan/gas 4. 
  2.  Mix the syrup, lemon juice and breadcrumbs in a small bowl until well combined.
  3. Stir in the 1/4 tsp cinnamon and spread the mixture over the bottom of any flat dish you have. I used a casserole dish but anything that holds close to 1.5 litres usually is perfect.
  4. Beat the butter and sugar in a larger bowl until pale and fluffy.
  5. Then beat in the eggs, one by one adding a spoonful of flour with each egg (this helps to prevent the mixture separating. 
  6. Stir in the rest of the flour, cinnamon and add the milk.
  7.  Take this mixture and dollop over the syrup working fast so it doesn't sink too much. Once the whole of the dish is covered in dollops try and spread the mixture to a smooth surface without moving the bottom treacle too much!
  8. Optional - sprinkle over a light dusting of caster sugar for a crunchier top.
  9. Bake for 35-40 mins until golden and risen, and a skewer poked into the sponge comes out clean-ish.
  10. Eat with lots of custard (my favourite), cream or ice cream and extra dribbles of syrup.

This is honestly soo delicious! Not quite as indulgent as a steamed pudding but perfect for a quick dessert with the same nostalgic taste and I loved it with cinnamon custard (I think I have a slight cinnamon problem!).
